I am obsessed with Pita Chips. It is so bad that we can’t have them in the house. I have been known to eat an entire Costco sized bag in one sitting. I seriously cannot control myself around them. So, rather than keeping the temptation around, we don’t buy them unless we need them. In that case, it is a last minute purchase so I can’t devour them. However, sometimes you just need pita chips and as much I love the store bought variety, there is nothing better than homemade. No, we are not going to start by making our own pita first. At least not yet. To make your own pita chips you just need some pita pockets, olive oil and salt. If you want to, you can also add a sprinkle of nutritional yeast for a cheesy flavor.

These are great with our HummusSun Dried Tomato Basil Spread and Mushroom Tapenade. Or, you can just eat them on their own.

Prep Time: 5 minutes
Cooking Time: 6-8 minutes

Ingredients:

4 pita pockets
1/4 cup extra virgin olive oil
1 tsp salt
1 TBL nutritional yeast (optional)

Directions:

1. Preheat oven to 400F. Line a baking sheet with tin foil and set aside.

2. Slice pitas open so you have 8 halves. Lightly brush the insides with olive oil.

3. Slice each half into 8 wedges.

4. Place on the baking sheet and sprinkle with salt (and nutritional yeast if using).

5. Bake for 3-4 minutes or until golden brown. Flip them over and bake another 3 minutes. If they start to get too dark, take them out of the oven.

6. Allow to cool to room temperature before serving.
