Remember the frozen pizza snacks from childhood? Sadly they are loaded with animal products. However, don’t you fret none, we have come up with a vegan version. Our Pepperoni Pizza Puffs are even better than the mass-produced snack of our youth. They are great for snacks at a game day party or as hors d’oeuvres to serve with cocktails. If you don’t like pepperoni, leave it out. Or substitute your favorite topping like vegan sausage, vegan beefy crumbles, or some diced vegetables. You can make these ahead of time and simply reheat them before serving. You might want to make a double batch as these will go quickly.

Yield: 24 puffs

Ingredients

2 ¼ tsp Ener-G egg replacer
3 TBL warm water
¾ cup all-purpose flour
¾ tsp baking powder
¾ cup plain, unsweetened, non-dairy milk
½ cup vegan mozzarella style shreds
¼ cup vegan pepperoni, diced
½ cup marinara sauce, store bought or homemade
2 TBL finely chopped fresh basil

Directions

1. Preheat oven to 375F. Lightly grease a 24-cup mini muffin pan.

2. In a small bowl, mix together the Ener-G and water. Mix well and set aside.

3. In a large bowl, whisk together the flour and baking powder; whisk in the milk and Ener-G mixture. Stir in the mozzarella shreds and pepperoni; let stand for 10 minutes.

4. Stir the batter and spoon 1 TBL batter into each muffin cup. Bake until puffed and golden, 20 to 25 minutes.

5. Heat the pizza sauce until warmed through, then stir in the basil.

6. Serve the puffs with the pizza sauce for dipping.
