Typically tomatoes are the main ingredient in gazpacho.  Not this time however.  Watermelon is the star of this soup.  With just 4 ingredients and a blender you can have an amazingly refreshing chilled summer soup. No need to turn on the stove for this one. Everything goes right in the blender or food processor.  If you really want to save time, you can even buy all the fruit already cut up. This soup is perfect for hot summer days. Prep Time: 10 minutes
Cooking Time: 2 minutes, plus an hour to chill
Yield: 8 cups

Ingredients:
2 pounds seedless watermelon, cubed
10 oz. fresh pineapple, cubed
2 mangoes, diced
1 TBL white vinegar

Directions:

1.  Place all ingredients in a blender.

2.  Pulse until mostly smooth with only a few small bits remaining. You want to leave a little texture and not have a completely pureed mixture.

3.  Pour into storage jars and chill for at least an hour before serving.
