Sometimes I get an idea for a variation on a recipe that I just know will work. This Pizza Bread is a spin on our Cheesy Beer Bread. I changed the seasonings to make it less cheesy and more pizza-y. Again, no need for yeast or rising time. Just mix everything in one bowl, put it in a pan and bake it. Try this as an accompaniment to your next Italian meal. Or just enjoy it on it’s own with a glass of red wine.

Cooking time: 50 minutes
Servings: 10-12

Ingredients:

1/2 cup diced sundried tomatoes, not oil packed
3 cups all purpose flour
4 ½  tsp baking powder
½ tsp salt
2 Tbl sugar
¼ cup nutritional yeast
1 12oz can or bottle of beer
1 TBL dried oregano
1 TBL dried basil
1 tsp garlic powder
1 TBL tomato paste
2 Tbl melted vegan butter

 

Directions:

1. Preheat oven to 350F. Lightly grease a 9X5 loaf pan.

2. Add the sundried tomatoes to a small bowl. Cover with hot water and set aside for 10 minutes. After 10 minutes, drain the tomatoes and wring them dry. You want them a dry as possible.

3. In a large bowl, mix dry ingredients well. Add in the tomato paste, sundried tomatoes and beer. Stir to combine. It will be thick and slightly lumpy.  Pour into prepared pan.

4. Pour melted butter on top of loaf.

5. Bake 45-50 minutes until a toothpick comes out clean
