If you heard me on the premier episode of the Teaching Jasmin How to Cook Vegan podcast, you heard me promise to come up with a Sweet Potato Pie Martini. Well, being a man of my word, I did it. Some of the inspiration for this comes from Mastering the Art of Vegan Cooking by Annie and Dan Shannon. In their book they talk about getting the most out of your ingredients and using remaining ingredients from one recipe in another one. That is just what I did here. I used the syrup drained from a can of yams from our Sweet Potato Casserole* as part of this new cocktail. So really, this drink is environmentally friendly as it is reducing waste: you’re not drinking, you’re recycling. This cocktail is like having a sweet potato pie in a glass. The toasted marshmallow garnish while not “necessary” helps complete the drink, making it a Sweet Potato Pie Martini, and after all, what is a drink without a nosh?

Ingredients:

2 oz vanilla vodka
2 oz syrup drained from canned sweet potatoes
1 toasted vegan marshmallow

Directions:

1. Fill a cocktail shaker with ice.

2. Add vodka and syrup to the shaker and shake well.

3. Strain into a chilled martini glass.

4. Garnish with a toasted marshmallow.
