This past Christmas Eve, we went to our friends Jill and Mike’s house as has become the tradition in years past. Jill is always so gracious in making everything vegan for us whenever we come over so that we can comfortably enjoy all the offerings. (Doesn’t everyone need omnivore friends like them?!? Hell yeah!)  The theme for this year’s dinner was “appetizers for dinner”. We brought a few items but when Jill put out her plate of Tater Tot-Chos my head nearly exploded.  Tater Tots crossed with nachos?!?? Yes, please!

Naturally, I came home and in a matter of days I had to make this. And how simple it was! This is kid-friendly food, party-friendly food, and most importantly, taste-friendly food.  You can make it your own by using different beans and toppings.  There are no true measurements for this, just add what you like. Here’s how we did ours…

Ingredients

16 oz, frozen tater tots
15 oz, black beans, rinsed, drained and prepared to your liking
1 large ripe avocado
12 oz package of prepared vegan ground beef (like Beyond Meat, Beefy Crumble)
Tomato Salsa (store-bought or homemade)
Vegan shredded cheese
Vegan sour cream

Directions

1. Bake the frozen tater tots according to the package directions.  When done plate them out as they are the base of the tot-cho platter.

2. While the tots are baking, prepare the vegan ground beef. Heat a skillet over medium-high heat and coat lightly with non-stick cooking spray. Add the vegan beef and saute until heated throughout.

3. Cover the tater tots with generous spoonfuls of the cooked black beans and ground vegan beef.

4. Sprinkle the vegan cheese and let it melt with from the heat of the tater tots, beans and vegan beef crumbles.

5. Top with salsa and a generous dollop of vegan sour cream.
