I woke up one morning and had a brilliant idea – what if I took a hot dog, sliced it down the center, filled it with cheese, wrapped the entire thing in bacon and grilled it? It really wasn’t so much a question as an exclamation. Later that day I did just that for lunch. When I started preparing it, Ethan looked at me with wide eyes, marveling at what I was doing. He wanted one too. Who wouldn’t? After a few mintues on the grill it was time to taste. It was even better than I thought it would be.

Cooking Time: 8 minutes
Yield: As many as you make

Ingredients:
1 package of vegan hotdogs. (I love the Field Roast Frankfurters)
2 strips of vegan bacon per hotdog (Upton’s Naturals Seitan Bacon is great here)
Shredded cheddar style vegan cheese
Hotdog buns & condiments

Directions:

1. Using a paring knife, slice each hotdog halfway through, lengthwise.

2. Stuff the cheddar style cheese into the groove you cut into each hotdog.

3. Take one strip of bacon and starting at one end of the hotdog, wrap the bacon around the hotdog in a spiral. One slice should get about halfway up the hotdog. Overlap the start of the second slice with the end of the first one and continue wrapping. Use toothpicks to secure the bacon strips.

4. Heat your grill or grill pan to high. Cook the hotdogs for 2 minutes, and then turn them. Cook another 2 minutes and turn again.  Repeat 2 more times  – cooking for 2 minutes and then turning until all sides are cooked.

5. Remove from heat. Remove the toothpicks. Serve with buns and condiments.
