Often when I want to come up with a recipe, I start with something I used to like as an onmivore and then see how I can make it vegan.  Beef Wellington was something I never made as an omnivore, and in fact only had once. However, I knew this was something that could be made vegan very easily. In fact, there was no trial and error with this one. I got it right on the first try.  This is not a complicated dish to make, but it does take a little advance preparation to make the onions and mushrooms.  If you want serious WOW factor, make this.  Your guest will marvel at you when you bring the golden pastry to the table.

A few tips:  This recipe uses Gardein Beefless Tips in place of the meat that Beef Wellington typically has. You will also need puff pastry dough. Usually puff pastry dough is made with butter.  However, Pepperidge Farms puff pastry, while not labeled as vegan is in fact vegan.  It contains no animal products at all, and it readily available in most grocery stores.

Ingredients:

1 sheet frozen puff pastry dough, thawed
1 recipe Mushroom Duxelle
½ recipe Caramelized Onions (make a whole recipe and save the extra)
1 package Gardein Beefless Tips, thawed, rinsed and dried
2 TBL unsweetened non-dairy milk

Directions:

1.  Pre-heat oven to 350F.  Line a baking sheet with aluminum foil.

2.  Unfold the puff pastry sheet onto a lightly floured surface. Gently roll it to smooth out the seems.

3.  Spread the Mushroom Duxelle over the middle third of the puff pastry. Leaving about ½ inch uncovered on each end.

4.  Cover the mushrooms with the caramelized onions.

5.  Add the Gardein in rows on top of the onions.  You should be able to fit 3 pieces across the onions and mushrooms. You should get 6 rows total. You may have some Gardein pieces left over.

6.  Fold the left side of the puff pastry over the Gardein. Don’t worry if it doesn’t cover it completely.

7.  Fold the right side of the puff pastry over the top of the other piece.  Press along the seem to completely seal it.  Fold the top and bottom edges up and press the seems to completely seal them.

8.  Flip the puff pastry package over and put on the prepared baking sheet. Brush with the non-dairy milk.

9.  Bake for 30 minutes or until golden brown.  Remove from oven and allow to cool slightly before serving.
