While Drunken Spaghetti sounds like something you might eat cold, out of a storage container, standing over the kitchen sink after a night out, it is nothing like that all. In fact, we would be truly shocked if you had any leftovers of it at all. Drunken Spaghetti is simply spaghetti cooked in red wine. Of course we needed to jazz it up a little, but that is basically all there is to it. If you can boil water, you can make Drunken Spaghetti. We first heard about Drunken Spaghetti when our friends Stacy and Keith had us over for dinner and served it to us. We were blown away at how good it is. When you think it about, it makes total sense: you serve red wine with spaghetti, so this really is not that far off.

After partially cooking your pasta in water, you finish cooking it in red wine.  It comes out a nice red color and very flavorful.   The recipe is easy and doesn’t require a long list of ingredients. Drunken Spaghetti perfect for one of those weeknights when you don’t know what to make and want something easy and flavorful. However, you could also easily serve this to guests and they would be impressed. As for what kind of wine to use, any red wine you like to drink would work. However something dry and fruity, like a Chianti or Zinfandel would be fantastic!

Prep Time: 5 minutes
Cooking Time: 10 minutes
Serves 4

Ingredients:

1 pound dry spaghetti
1 tablepspoon extra virgin olive oil
2 large cloves of garlic, thinly sliced
1 teaspoon crushed red pepper
3 cups red wine
Vegan parmesan cheese (optional)

Directions:

1. Bring a large pot of water to a boil, add a tablespoon of salt and the spaghetti. Boil half the time directed on the package, about 5 minutes. You only want to partially cook it.

2. While the spaghetti is boiling, heat the oil in a large skillet over low heat. Add the the garlic and red pepper. Cook for 5 minutes, or until the garlic starts to brown, do not let the garlic burn. Remove and discard the garlic. Pour in the red wine and raise the heat to medium.

3. Drain the spaghetti and immediately add it to the skillet with the wine. Use tongs to toss the spaghetti with the wine and cook until the wine is absorbed and the spaghetti is cooked.

Serve immediately with some vegan parmesan on the side.
