When I was little I loved when my parents would go out for dinner because that meant I got to have a frozen dinner of some sort. If I wasn’t choosing a TV dinner, I would pick the Stouffer’s French Bread Pizza. It was pizza that you could hold in one hand which is pretty cool when you’re a kid. When I was trying recipes from Jenny Hasson’s Vegan Casseroles I was left with one mini baguette after making her Rustic Bread Pudding, and I wasn’t sure what to do with it. Then, my love of French Bread Pizza came rushing back to me. (You never know when inspiration will strike!) I grabbed some sauce and vegan mozzarella and in a few minutes I was reliving my youth. I am a pizza purest and not fond of toppings other than cheese, but feel free to add whatever toppings you like. These are great a light meal, or slice them into small pieces for an appetizer or hors d’oeuvre. These pizzas areĀ better and faster than ordering a pizza for delivery. They even make a great after school snack for kids.
Prep Time: 5 minutes
Cooking Time: 8 minutes
Servings: 2 – 4 as a meal, but you can slice them into bite sized bits as appetizers.
Ingredients
2 French mini baguettes, sliced in half lengthwise
1/2 cup tomato sauce, homemade or store bought
1/4 cup shredded vegan mozzarella style shreds
any pizza toppings you like
Directions:
1. Preheat oven to 425F. Line a baking sheet with aluminum foil. Place the bread, cut side up on the baking sheet and cook for 5 minutes, or until just starting to brown.
2. Remove bread from the oven and spread each baguette half with 2 Tablespoons of sauce. If you like more sauce, use more.
3. Top the sauce with the vegan shreds and any pizza toppings you like.
4. Place the bread on the prepared baking sheet and bake for 8 minutes or until the edges of the bread are browned and the cheese is melted.
5. Remove from oven and allow to cool slightly before serving.
