I love kiwis. However, almost every time I buy them I end up having to get rid of some that went bad before I ate them. I wanted to figure out a new way to use kiwis rather than simply eating them. I tried making kiwi ice cream, but was not happy with the results. So I thought that instead of eating them, let’s try drinking them. With that, the Kiwi Slushie was born. You can leave out the rum and keep this as an all ages drink or add it in and have an adult beverage. If you do omit the rum, add in an equivalent amount of seltzer to make up the volume difference. The Kiwi Slushie is a cross between a kiwi daiquiri and a kiwi mojito.
Ingredients
4 cups ice
6 ripe kiwis, peeled and sliced
6 tablespoons light agave
1/3 cup fresh mint leaves
2 teaspoons fresh lime juice
1 cup light rum (optional)
6 kiwi slices and mint sprigs for garnish
Directions:
1. Place the ice, kiwis, agave, mint, and lime juice in blender and blend until smooth, about 3 minutes.
2. Pour the mixture into a large pitcher and stir in the rum or seltzer.
3. Pour into glasses, garnish with a kiwi slice and a sprig of mint.
