Summertime means stone fruit season is here and peaches are one of my favorites. Our Peach Melba Slushie is a new way to make use of this summertime favorite and a great twist on the classic ice cream dessert. I first heard of a Peach Melba when I was eating a cafeteria in France. I was 14 years old and to my young eyes it looked so exotic. Ice cream on top of peaches and topped with raspberries. This was a far cry from the American ice cream sundaes I was used to. I always associated this dessert with France as that is where I first saw it. However, when I looking up the history of the dish, I learned that the Peach Melba actually comes from England. The Peach Melba was created in 1892 by the French chef Auguste Escoffier at the Savoy Hotel, London, to honor the Australian soprano, Nellie Melba. I took the idea of the dessert and it into a drinkable treat. You can add alcohol for an adult beverage or leave it out for a summertime refresher.

Ingredients
3 cups ice
2 cups peeled and sliced peaches, fresh or frozen
1 6oz container raspberries
1/4 cup agave
2 TBL sugar
1 TBL fresh lemon juice
1 tsp vanilla extract
1 cup vodka, optional
Directions:
1. Add all ingredients to a blender. Blend until smooth, about 2-3 minutes.
2. Pour into glasses and serve.
