While not a true s’more, as there are no graham crackers involved, this cookie bar is filled with melted chocolate and marshmallows. This cookie is almost like a new take on a Mallowmar. The cookie is really just a vehicle to get the chocolate and marshmallow to your mouth. But don’t think this cookie isn’t spectacular, because it is. This is a flavor bonanza and a bit of a sugar rush too. This takes the idea of a pan cookie to a whole new level.
Prep Time: 20 minutes
Baking Time: 15 – 18 minutes
Yield: 12 large, 24 medium or 32 small bars
Ingredients:
2¼ cups flour
1 tsp baking soda
½ tsp salt
1 cup old fashioned rolled oats
1 cup vegan butter
¾ cup sugar
¾ cup packed brown sugar
2 tsp vanilla extract
4½ tsp Ener-G Egg Replacer
6 TBL water
2 cups chocolate chips
2 cups marshmallows (cut into small pieces if using large ones)
Directions:
1. Preheat oven to 350F. Grease a 9×13 baking pan and set aside.
2. In a medium bowl, combine flour, baking soda, salt and oats. Set aside.
3. In a large bowl, beat butter, sugar, brown sugar and vanilla until creamy, about 5 minutes.
4. In a small bowl, combine the egg replacer and water. Mix vigorously until thick and foamy. You can do it by hand, but it works much better in a blender or with an immersion blender using the whisk attachment. Add to the creamed butter mixture. Beat to fully incorporate.
5. Gradually add the flour mixture to the butter mixture in 3 additions, beating well after each addition. After the last addition, beat to fully combine.
6. Divide dough in half. Press one half of the dough into bottom of the prepared baking pan. Cover the entire bottom of the pan. It helps if your hands are wet when you do this so the dough doesn’t stick. You can scoop the dough into the pan first as if you were making cookies and then press the scoops of dough together.
7. Spread the chocolate chips over the dough in a single layer.
8. Cover the chocolate chips with the marshmallows.
9. Scoop the remaining dough into 12 balls. Moisten your hands with water and flatten each ball into a disc. Cover the marshmallows with the discs of dough. Press them together to completely cover the marshmallows. The entire top should completely covered. You don’t want to see any marshmallows or chips.
10. Bake in preheated oven for 15-18 minutes or until golden brown.
11. Remove pan from oven and allow to cool slightly before cutting. Cut into 12 large or 24 medium bars. You can cut them smaller too, but why?
