Ordinary tofu takes on a Greek flavor with our Sorta Feta Tofu. This feta tofu is a great addition to salads or as part of a Mediterranean mezze plate. While very reminiscent of feta, it is not an exact copy, hence the name Sorta Feta Tofu. The key thing here is to use the firmest tofu you can find. Make a lot and take out only what you need allowing the rest to keep marinating and getting an even deeper flavor. It will keep up to a week in the refrigerator, after that, the tofu starts to break down. So pour yourself a nice glass of Retsina to enjoy with your feta tofu and will you will like you’re watching a sunset in Santorini.

Ingredients:
1 pound super firm tofu, drained and rinsed, diced into 1/2 cubes
Juice of 1/2 lemon
2 TBL miso paste
2 tsp dried oregano
2 TBL water
Directions
1. In a small bowl, whisk together the lemon juice, miso, oregano and water.
2. Add in tofu and toss to combine.
3. Cover and refrigerate overnight, occasionally stirring to make sure all the tofu is in the marinade. Or place in a sealable plastic bag and remove as much as possible before sealing.
4. When ready to use, take out what you want and let the rest stay in the marinade.
