I love smoothies for breakfast.  They are quick and easy to make.  Smoothies are also a great way to get fruits and veggies into your diet.  One morning I was going to prepare breakfast and for everything I wanted to make I was missing a key component. For pancakes I didn’t have enough non-dairy milk, for a tofu scramble  I was missing some veggies, etc. So, I regrouped and decided to use what I had on hand.  Sometimes when I do this, the results are less than good.  This time, however, I was very happy with the results and our Tropical Smoothie was born.  This smoothie ended up thicker than most smoothies I make, but I didn’t mind that. I actually liked that it slowed me down a little.  The peach and mango give a nice sweetness to the entire combination.

Prep Time: 2 minutes
Servings: 1

Ingredients:

1/5 block of silken tofu
1/3 cup blueberries, fresh or frozen
1 banana, frozen if possible
1 whole peach, stone removed
1/2 avocado
1/3 cup frozen mango chunks
1 cup orange juice

Directions:
1.  Put tofu in a blender.

2. Add the rest of the ingredients.

3.  Blend until smooth.

4. Pour into a glass and drink.
