When we think of classic “all American” foods, Mac and Cheese and hotdogs come to mind.  We combine them to create an All American Mac and Cheese. However, adding in a hotdog wasn’t quite enough, so we top the entire thing with crushed up potato chips. Yes, hotdogs, potato chips, and mac and cheese all in one dish. If you have little kids who only will eat mac and cheese or hotdogs, you can give them both in one meal. This is also great for when you want to binge watch your favorite series on Netflix, or on a rainy day when you don’t want to get out of sweatpants, or when you want to treat yourself to some good “junk food” or really anytime at all. For the hotdogs, we are partial to Field Roast Frankfurters, but use whatever kind you like.

Prep Time: 15 minutes
Cooking Time: 5 minutes
Servings: 4-6

Ingredients:

2 vegan hotdogs
1 recipe Classic Mac and Cheese
1 cup crushed ruffled potato chips

Directions:

1. Heat a medium skillet over medium-high heat. Spray the skillet lightly with nonstick cooking spray and add the hotdogs. Cook for a minute on each side until fully cooked and completely heated, about 5 minutes. Remove the hotdogs from the skillet and cut each one in half lengthwise. Cut each of those halves in half again lengthwise. Slice each of the 8 pieces into 1/4 cubes.

2. Fold the diced hotdogs into the mac and cheese. Transfer the mixture into a serving dish and top with the crushed potato chips.
