We are continually awed by our friend JL Fields. Somehow between speaking and demoing at veg fests around the country, planning a Vegan Holiday Market, teaching at Main Street Vegan Academy, running the Colorado Springs Vegan Cooking Academy, and writing a regular vegan food column for the Gazette in Colorado Springs, she has managed to write another cookbook. Her latest book, her fifth if you are counting, Vegan Meal Prep: Ready-To-Go Meals and Snacks for Health Plant-Based Eating is out now.
If you are like us, after a long day at the office, coming home and deciding what to make for dinner, let alone making it, gets very tiresome. Thanks to JL and Vegan Meal Prep, this is no longer a problem. In Vegan Meal Prep, JL takes the mystery out of bulk cooking and teaches us that with just a little planning and preparation, you can have a weeks worth of meals ready in almost no time.
JL designed the recipes in Vegan Meal Prep for a set number of meal per week. All we need to do is follow the simple recipe, portion it out into containers, and we are all set. Vegan Meal Prep contains 70 recipes that are great for cooking in advance as well as eight “preps” in which she gives us five days of meals. The recipes in Vegan Meal Prep are easy to follow and straightforward. This is real cooking for real people. These recipes are not intended to be “showstoppers” with a big “WOW” factor that we would pull out for a dinner party, but rather for the kind of meals we eat on a daily basis: simple and delicious.
Whether you are interested in exploring veganism, a new vegan, or a long time vegan, Vegan Meal Prep is a great book to have on hand for taking the stress out of meal planning.
